Jean-François Archambault, founder of the organization The Chef Table, learnt to cook with his mother when he was a young boy. During his studies in Hotel Management at the Quebec Tourism and Hotel Institute, he became aware that huge quantities of food were going to waste on a daily basis.

The notion of salvaging the mountains of food thrown away by restaurants and redistributing it among less privileged families is gradually catching on. After having overcome various challenges, and met with the resistance of some chefs, Jean-François Archambault set up The Chef Table (La Tablée des Chefs) in 2002.
